Banana Avocado Chocolate Pudding


Do you ever wonder what to do with overripe avocados? Try this delicious dairy free dessert which gets its creaminess from avocado and coconut milk. The sweetness from the banana and maple syrup covers any hint of avocado so it’s a great snack for kids and picky adults.

Banana Avocado Chocolate Pudding

1 ripe banana
2 over ripe avocados
1/4 cup maple syrup
1/4 cup cocoa powder
1 tablespoon vanilla
1/2-1 can coconut milk, chilled
1 cup soy, gluten, dairy free mini chocolate chips

Add all ingredients except coconut milk and chocolate chips to blender. Slowly add coconut milk, cream first, to blender while blending. Add only enough coconut milk to achieve creamy consistency. Remove from blender. Gently mix in chocolate chips. Divide into 6 individual bowls and garnish with a few more chips.

Chill at least 2-4 hours before serving.
