Eating for Wellness Homemade Mayonnaise

When I first started making lifestyle changes in 2007, condiments, like mayonnaise, catsup and salad dressings were the hardest things to give up. Since this recipe is made with higher quality ingredients of your choice, you can enjoy it without worry or guilt.
I’ve attached a short video demonstrating the technique to making perfect mayonnaise every time.

Eating for Wellness Mayonnaise

2 egg yolks; I use unpasteurized farm fresh eggs but if you are concerned about eating raw eggs, you can purchase pasteurized eggs in many markets.

1 T mustard of choice; I prefer yellow mustard or Dijon

2 T vinegar or acid of choice; I prefer a sweeter vinegar like a white balsamic or citrus balsamic but you can use any vinegar; lemon or lime juice.

1 1/4 cups light oil; I prefer a mixture of almond and walnut oil. Avoid vegetable oils like canola, grape seed and soybean oil. Use olive oil sparingly as it has a strong flavor and will overpower your mayonnaise.

1 tsp sea salt; smoked salt can be used here.

1 tsp smoked paprika, optional

1 tsp roasted or granulate garlic, optional
