Shrimp and Cod In a Tomato Red Pepper Sauce
This amazing shrimp and cod recipe is easier than it looks. And the results are stunning.
Ingredients
6 medium shrimp in shells
4 oz cod or any other mild white fish, cut into cubes
1 large red bell pepper, seeded and sliced
1 large red onion, sliced
3 ripe plum tomatoes, cut in quarters
Juice of one lemon, with slice reserved for garnish
Sea salt and fresh cracked pepper
1 Tbsp dried oregano
1 Tbsp coconut oil
1 Tbsp organic grass fed/pastured butter
Fresh cilantro and oregano for
Fresh lemon slices for garnish
Directions
In a large sauté pan heat coconut oil until melted. Add onions and red peppers and sauté for 5-6 minutes without allowing to brown.
Salt and pepper the shrimp and cod. Add to pan with onions and peppers. Allow to cook for an additional 3-5 minutes or until fish begins to get firm and shrimp are turning white.
Add diced tomatoes and dried oregano to pan along with additional salt and pepper. Let tomatoes cook down until they begin to breakdown and release their juice.
Add the juice of one fresh lemon and continue cooking for 2-3 minutes.
Once tomatoes have completely broken down, add butter and stir until a nice smooth sauce is formed. Topped with fresh cilantro and oregano leaves and a lemon slice.
